WHere is an easy take on a beverage found on the seasonal menu. It's a batch prepared mix which is loaded with the tastes associated with Christmas time, rendering it ideal for a holiday party. Any leftover syrup for morning drinks, sweets, or to mix additional servings of the drink.

Yields 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Cocktail (makes 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
Making the Syrup: Place the listed items into a pan, bring to a light boil, agitating so the sugar melts. Then, turn off the burner allowing it to reach room temperature completely. Transfer into a clean bottle, close it keeping it chilled, it will last for around one month.
Preparing the Cocktail Base: Mix every liquids into one sizeable container, let it rest for an hour, then filter it preferably using muslin, making it fully clarified.
When ready to serve: Measure 85ml from the batch mix into a mixing glass packed with ice, and stir lightly for about 60 seconds to cool it down. Pour to a chilled martini glass or a similar vessel, garnish with some cranberries and complete it using a brief mist with the mandarin essence over the drink.
